Sao Paulo Cachaca could be called an "estate cachaca" in that the sugar cane is grown and harvested at the site of the distillery. They use a traditional pot distillation batch method to produce the spirit, which they say preserves the aroma of the sugarcane, then rested for 4 months in oak prior to bottling.
